Make Your Own Jam Wedding Favours

Here at Fund Your Wedding, we love these DIY jam favours. As always they are really easy to make and can be stored for a up to a year, meaning you can make these in advance of your special day so that there is no added pressure.

What you need: – 1kg strawberries- 750g jam sugar- 1 Lemon- Small knob of butter (optional)

Method:

1. First you want to prepare your strawberries by wiping them with a damp cloth. You don’t want to wash them in water as the water they absorb may affect how the jam sets.

2. Remove the hard stem and cut the strawberries in half.

3. Place the strawberries into a bowl and add the sugar.

4. Leave uncovered at room temperature overnight.

5. If you don’t have a cooking thermometer, put two saucepans in the freezer to cool. This will hep you to test the temperature later.

6. Pour the strawberry mixture into a pan with the juice of one lemon.

7. Place over a low heat and cook very gently.

8. Remove any sugar that’s left on the sides of the pan, when there is no longer any sugar on the sides of the pan, you can turn up the heat until the jam comes to the boil. Please note that the sugar must have dissolved before you turn up the heat.

9. Keep it at boiling temperature until the jam has reached 105C. if you don’t have a cooking thermometer, grab your saucepan out of the freezer and spoon a little jam into the pan. Leaver for 30 seconds then push with your finger. If the jam wrinkles and stays put, it is ready. If not, put it back onto the heat and boil for another 2 minutes. Test it again on your second saucepan.

10. Remove any scum that has risen to the surface during the boiling stage with a spoon.

11. Add the butter (optional) and stir until it has melted.

12. Leave the jam for 15 minutes

13. Pour the mixture into your jam jars and place a wax disc on top of the jam, then cover with a lid or cellophane, holding it in place with an elastic band.

14. The jam can now be stored in a cool, dry place for up to one year. Keep refridgerated after opening.

 

Optional extras: 1. Add a colourful peice of fabric over the top and secure into place with brown string (See above photo)2.
